The winner is a product designed by those innovative folks at Cuisipro. It’s a pair of stainless steel and silicone egg poachers, and it’s clear that a lot of thought went into this product.
First, each of the poachers in a pair is a different color (yellow and white). That seems like a simple thing, but it means that if you’re poaching 2 eggs, it’s easier to remember which one you started first, so that’s the one you take out first.
The cup that holds the egg is stainless steel, which is not a good conductor of heat, so the eggs poach by the water swirling around them: not by the metal they rest on. And it’s that water swirling around that is one of the big differentiators. Remember that you want to poach your egg, not steam it, so the idea of having the egg submerged in water, while still contained so it doesn’t spread, is a brilliant one.
There is a hook that hangs the poacher over the side of your pot, so you have something to grab onto to remove the poacher from the water (careful, it can get hot!); the height of the hook is adjustable so that it fits a variety of pots. It also provides stability for the poacher so that it doesn’t tip your egg into the water (I’ve had that happen to me with other models!)
The other advantage of this egg poacher is that because you’re poaching your eggs in an open pot, you can see and test your eggs, without raising a lid and losing steam, so you’re much more likely to get the results you want.
Finally, when your egg is done and you remove it from the water, there are holes in the back through which to drain the water by tilting the poacher just a little.
The resulting egg is perfect, and it still looks like an authentic water-poached egg.
